Lara-Like No Bake Coconut Chewy Bars


I love making my own healthier version of commercial products that I enjoys. Lara Bars have a great coconut cream bar but they are less expensive and so simple to make why buy them?

This is a great snack to include your kids in to help you make.  These no-bake bars makes a great snack for school lunches, they are gluten free, raw, and packed with protein.


Organic Ingredients-

1/4 cup raw cashews
1/4 cup raw almonds
6 dried apricots (dates can be substituted)
2 tbsp honey (or coconut crystals)
1/2 cup unsweetened coconut flakes
1/4 cup unrefined coconut oil


Blend together all ingredients in food processor.


Spread mixture onto parchment paper and smooth to form a rectangle, Freeze for 15 minutes.20130517-150320.jpg

Let bars sit out for a few minutes before cutting, to soften.


Play with ingredients, you could add in peanut butter, jelly, chocolate chips, your favorite cereal or maple syrup as a sweetener, have fun and make it yummy.

  1. I am allergic to all nuts but peanuts is a substitute you recommend for cashews and almonds instead of 1/2 c of peanuts?

  2. I would try making them with a little less than 1/2 cup of an organic cereal, maybe try an organic cheerio. Another substitute would be think a little bit less than 1/4 cup of each flax and raw pumpkin seeds.

    The cereal sounds good, I’m going to make it again today with Organic O’s and see how it turns out.
