I love making my own healthier version of commercial products that I enjoys. Lara Bars have a great coconut cream bar but they are less expensive and so simple to make why buy them?
This is a great snack to include your kids in to help you make. These no-bake bars makes a great snack for school lunches, they are gluten free, raw, and packed with protein.
1/4 cup raw cashews
1/4 cup raw almonds
6 dried apricots (dates can be substituted)
2 tbsp honey (or coconut crystals)
1/2 cup unsweetened coconut flakes
1/4 cup unrefined coconut oil
Blend together all ingredients in food processor.
Let bars sit out for a few minutes before cutting, to soften.
Play with ingredients, you could add in peanut butter, jelly, chocolate chips, your favorite cereal or maple syrup as a sweetener, have fun and make it yummy.
